Avoid falling for the usual unhealthy treats this xmas by making your own. Make them up and keep in the freezer and this way they will last the whole festive season, helps keep them out of they eyes way.. i.e. not eating too many, helps keep you on track and means that once they are made you can take more time for you!!
CHOCOLATE FRUIT & NUT CLUSTERS
5 GLS PER SERVING
INGREDIENTS:
•100g dark chocolate (e.g.Green&Blacks or any other good quality chocolate)
•15g driedcranberries
•40g pecan nuts
•5 Nairns rough oatcakes
•2tsp xylitol
•40g flaked almonds
METHOD:
1 Melt the chocolate in a glass bowl set in shallow water over a low heat
2 Blend all the ingredients except for the flaked almonds in a blender until roughly chopped
3 Add the mixture with the flaked almonds to the melted chocolate and coat through
4 Spoon into 10–12 cake cases for a 5GL snack or 20 petit four cases for a 2.5 GLsack
5 Chill in the fridge until set
TOP TIP
These are delicious and a favourite with kids. Get them involved in making them too. Ideal as a sweet treat following your Christmas meal if you don’t want a heavy pudding. Or serve with tea/coffee later.
